Gary Kerbaugh's Suggested Reading List for OS X Unix
There are many good books and numerous tutorials on-line. I've heard good things about the books, Unix for the Impatient and Unix For Mac OS X by our own Matisse Enzer. O'Reilly has the most specifically about MacOS X. They now have a server dedicated to MacOS X books. Of particular interest might be Learning Unix for Mac OS X Tiger. They also have many of the best tutorials, for instance, Learning the Terminal in Jaguar, Part 1, Part 2 and An Introduction to Tiger Terminal, Part 1, Part 2, Part 3, Part 4 and Part 5. A full list of similar articles there can be found at Terminal App and Unix.
